When people think about Paleo recipes, most of them can’t believe that a person can eat well – and scrumptiously – without sugar, dairy, and all the processed food items that have become almost essential for everyday cooking. Here are three Paleo Diet recipes for breakfast, dinner, and dessert that will prove them wrong.

Paleo Diet Breakfast Recipe

Scrambled Eggs with Smoked Salmon and Chive

Ingredients:    

  • 3 eggs
  • 2 tablespoons chives, chopped
  • 2 teaspoons onion, finely chopped
  • 2 thin slices smoked salmon, chopped
  • salt and pepper
  • oil

Instructions:     

  1. Heat the oil in a frying pan on medium heat, and then add the chopped onions and cook for a couple of minutes or until they start to brown.
  2. Remove the onions from the pan.
  3. In a bowl, whisk the eggs lightly (just until the yolk and the whites start to combine).
  4. Lower the heat on the pan and then cook the eggs, stirring constantly. When the eggs are almost done (still runny), add the chopped chives and cook for another minute.
  5. Transfer the eggs onto a plate just before they reach the desired doneness. Residual heat will continue to cook the eggs.
  6. Top the scrambled eggs with chopped smoked salmon and more chopped chives, if desired.
  7. Serve immediately.

Paleo Diet Dinner Recipe

Macadamia Chicken

Ingredients:

  • 2 chicken breasts, cut into 3 pieces each
  • oil for frying
  • For the macadamia topping:
  • ½ cup macadamia nuts
  • 1/3 cup red onion, diced
  • 1 garlic clove, minced
  • 1 tablespoon oil
  • 4 tablespoons chives, chopped
  • big pinch of salt

Instructions:

  1. Make the macadamia topping by separately frying the onions and the garlic in oil and salt until both are soft and slightly browned.
  2. Save the oil used for frying the garlic and onions and use it to fry the macadamia nuts, stirring constantly until they are lightly toasted.
  3. Remove the nuts from the pan and allow to cool down slightly.
  4. In a blender or food processor, combine the macadamia nuts, onions, and garlic clove and pulse until a crunchy, grainy consistency is reached.
  5. Place the mixture in a bowl and add in the chopped chives.
  6. Heat about a tablespoon of oil in a pan on high heat and fry the chicken breast pieces.
  7. Cook for 6-10 minutes or until they are cooked through. Turn the chicken over several times to make sure that both sides are cooked.
  8. To serve, place the chicken pieces on a plate and top each with the macadamia topping.
  9. Serve with salad or vegetables.

Paleo Diet Desert Recipe

Raspberry-Lemon Tart

Ingredients:     

For the pastry:

  • 1 cup walnuts, chopped
  • 1 ½ cups dates
  • 1 ½ cups almonds

For the filling:

  • 1 cup coconut milk
  • 6 eggs, beaten
  • 1/3 cup lemon juice
  • 2 teaspoons grated lemon rind
  • 2/3 cup raspberries
  • 1 ½ tablespoons honey

Instructions:     

  1. Preheat the oven to 350º Fahrenheit.
  2. Line a 23-cm tart pan with parchment paper or coat it with non-stick cooking spray.
  3. Make the pastry by pulsing together the dates, almonds, and walnuts in a food processor until they reach a coarse consistency.
  4. Press the mixture onto the bottom and sides of the tart pan.
  5. Put the pan in the fridge while the filling is prepared.
  6. For the filling,mix the coconut milk with the lemon juice, lemon rind, and honey in a pan and simmer on very low heat for about 2 minutes.
  7. Add the eggs (making sure they don’t cook and become scrambled eggs), and stir them in quickly until the filling is smooth and thick.
  8. Add more honey, to taste.
  9. Cool the filling slightly before pouring it into the pastry.
  10. Bake the tart for 20-30 minutes. Top with raspberries and serve.
